A project highlight photographing the latest location for a local Colorado restaurant: Los Dos Potrillos.
Local family-owned restaurant group, Los Dos Potrillos, opened their fifth and largest location to date in Castle Rock, Colorado. Local construction company, GH Phipps was hired to lead the construction of this commercial design project.
Opening its first location in Centennial in 2002, Los Dos Potrillos has since opened five locations in the southern suburbs of Denver (including Castle Rock). The family-owned restaurant group has made a name for itself as one of the best Mexican restaurants in the area. Known for its Mexican cuisine inspired by the founder, Jose Ramirez’s hometown of Jerez, Mexico.
This was a two-year project that started from the ground up. It included construction on 9,000 sq. ft. of space, a new brewing facility, a full bar, and a kitchen. Plus a 1,000 sq. ft. outdoor patio with built-in fireplaces and epic mountain views.

GH Phipps hired Mountain Light Photography to capture the grandeur of this space and the unique details that went into its design. GH Phipps has won awards for innovative space design and the Mayor’s Design award for their work on the Denver Botanic Gardens and Junction Food and Drink.
In addition to hiring Mountain Light Photography for their commercial photography needs, GH Phipps also hired us for event photography. A planned ribbon-cutting ceremony was scheduled to celebrate the opening of the restaurant. This was a fun way to capture the hard work that went into this commercial construction project. It was a great way to showcase how GH Phipps and Los Dos Potrillos partnered together for this venture.
Plus, we were able to capture a few fun company photos of the construction team that worked on the project.
